This raw carrot cake is composed of a layer of dates, carrots, walnuts, coconut, spices and oats; and a layer of cashews, coconut milk, lemon, and vanilla. Topped with walnuts.

Keeps well in the fridge for a week. Can also be stored in the freezer, just take out your slice 10 minutes before degustation.
